Housemade Low Country Spice


ingredients

4 tablespoons paprika
1 tablespoon cayenne pepper
2 1/2 tablespoons black pepper
3 tablespoons garlic powder
1 1/2 tablespoons onion powder
3 tablespoons salt
1 1/4 tablespoons oregano
1 1/4 tablespoons dried thyme
2 tablespoons mustard seed
1 tablespoon ground bay leaves

directions

Mix all ingredients together in a spice grinder. Mix together evenly and keep in a dry, cool place for up to 4 weeks.



Chef Anthony Gray uses this spice for several things, including High Cotton's blackened bacon for their wedge salad and for their shrimp and grits. It is an all-purpose spice that goes great with anything needing a little kick. He seasons grouper with it for specials and rubs tuna with it for the grill. He also uses it to season soups such as High Cotton's tomato, okra, and ham soup and seafood chowders.
