Hummus


ingredients

2 cans chick peas (garbanzo beans), drained
3 tablespoons extra virgin olive oil
2 heaping tablespoons tahini (available at specialty grocery stores)
juice of 1 large lemon
4 cloves roasted garlic or 3 dashes garlic powder
3 pinches toasted ground coriander
2 pinches sweet or hot paprika
1 pinch cumin
sea salt & white pepper to taste

directions

Blend all ingredients together in a food processor until smooth. As some chick peas retain more or less water than others, you may need to add a little water if it seems too thick. Serve with toasted pita bread. Alternatively, hummus can be used as a vegetable dip or sandwich spread.
