Sofrito Collard Greens
ingredients
2 slices bacon- thick sliced
1/4 cup onion- minced
2 tablespoons roasted red pepper
1 teaspoon garlic- minced
1/2 teaspoon paprika
1/4 teaspoon fresh oregano
2 cups collard greens- fresh, stemmed, thinly sliced
1/4 cup water
salt & pepper- to taste

directions
Saute bacon in a nonstick skillet until crisp. Add onions, red pepper, garlic and seasonings; cook until soft (5 minutes). Stir in greens and water. Cook, stirring often, until liquid is evaporated and greens have wilted slightly (3-4 minutes). Season with salt & pepper. Serves 2.
