Carlos Echeverri

Carlos Echeverri, Executive Chef at Coal Fired Pizza Co., was raised in Colombia, where his culinary career began early at the age of seventeen. When he turned twenty-one he ventured to Italy to explore the world of Italian food while working at restaurants like La Riviera in Rome and Tulipano in Verona. He remained there for almost 2 years and moved to the states to share his ideas with the world. Carlos assisted in the opening of Il Mondo Vecchio and Scalini Fedeli, which is hailed as the best Italian food in New Jersey by the New York Times. He remained in this restaurant group for twenty-three years until Coal Fired Pizza Co. offered him the Executive Chef position. Carlos was overjoyed with the idea of warmer weather, a smaller staff and the opportunity to use his imagination for a menu while still offering authentic and original gourmet dishes. Since taking over Coal Fired Pizza Co., Carlos has made the menu his own, demonstrating a fusion of Italian and French cuisine. His signature dish is the Salmon de la Notte, pignoli-crusted salmon served over asparagus in a tomato basil infused white wine sauce.

The name does not represent how good the food is. The rack of lamb, veal chop are the best in town. The pasta dishes have a lot of flavor and the cheeses used are the real thing. Portion sizes are big and colorful. The wine system is fun for groups... bring your wallet, though.

We ventured out to Coal Fired Pizza for girls night and couldn't have asked for a better start for our evening. What a classy place in such an unexpected location. The wine serving system was a perfect way to try new wines without having to drink an entire glass. And of course, all of the wines were so good that we easily lost track of the balance on our wine card. But no problem, reload and go. The food was amazing, pizza was cooked just right, staff was great, and we look forward to trying different items next time. We liked it so much, we've already made reservations to bring the rest of the families over for the experience. Looking forward to our next visit.

Why Did I Wait So Long

I knew the restaurant had existed for almost a year and friends had told me what a great place it is...well I finally sat down and experienced a unique find in the Greenville culinary market...ordered great bottle of Brunello with a cheese plate and the Mushroom Napolean...out of this world I can still imagine the flavors that were presented...entree...veal osso bucco, portion is large enough for two and satisfied my every expectation of osso bucco...where did these people come from...great job guys!!!!

A great find - unexpected!

Without reading the reviews on this site, I would have never ventured down Pelham to find this restaurant, but boy am I glad I did! Tucked away in an unassuming location, inside the restaurant you'd never imagine you were sitting across the road from a gas station. Incredible selection of wines and Italian cuisine, and unbeatable pizzas for sure - you can see the fire of the oven from your seat! Delicious!

UNBEATABLE!!

Best food in a very long time! The management was personable and helpful with large party reservations; the wait staff was welcoming and efficient, and the food was flawless. Even got a follow-up call from the owner the next day, to get feedback on our experience. I can't say enough GOOD things about this establishment. Twelve of us are going back this weekend for more!!! (Wish they were open on Sundays . . . )

This restaurant is a gem! Best Italian food we have had since moving to this area of the state last year. The selection was fantastic and each dish was delicious. Ten stars for the calamari - best ever. I had the scampi pancetta and it was cooked perfectly. My husband had the veal parmesan. We both took a doggy bag home and enjoyed every bite of our leftovers the next day. We will be back!

Best Food in the Upstate

My husband and I tried Coal Fired Pizza Co. for the first time last night. The meal was exceptional, and we look forward to trying other menu items. We had the scallop appetizer (saffron sauce), the porcini ravioli and featured Chilean Sea Bass entree. We were on a timeline and weren't able to try the wine-tasting system, but are excited to do this on a future trip. This is a must-try for discriminating foodies!

Best Italian food in SC!!!

If you are from anywhere North of the Mason Dixon line and missing great Italian food than look no further. Coal-Fired Pizza Co. has the best food in Greenville, hands down. I am from a large Italian family and know good food when I taste it. There is no better pizza and the dinner menu offers the most delicious cuisine your palate can handle. If you are southern-raised and tired of corn bread and chicken, than this restaurant is a must to add to your to do list. Your taste buds are in for a real treat. Don't leave without trying the cheesecake.

This place rocks!! I moved here from NY and this food tastes like home to me. This is REAL Italian---I should know. The pizza is genuine NY style, the pasta is al dente, the seafood is the freshest I've had. But, the sauces this Chef makes are unbelievable! Trust me....go there!

A Hidden Treasure!!!

If you're looking for a whole-in-the-wall pizza joint, this isn't it. Their pizza is amazing but Coal-Fired is so much more. Pasta, steak, seafood. This place does it all just right. Try the chef's special of the day. It's always amazing and inventive. It's also a must for any wine enthusiast. And don't forget to save room for tiramasu!

Downtown chic on Pelham Road

The exterior and name of Coal Fired Pizza is a bit misleading. Behind this storefront on Pelham Road lies a chic, dare I say cool, new Italian restaurant. There are delicious pizzas to be sure--including a wonderfully light crust and unique toppings--but the restaurant boasts an elegant menu of Italian specialties. The true star, though, is the wine-tasting experience they offer. Diners can purchase a debit card to use at several wine tasting stations. From here, select a taste or a full glass of wine to be dispensed, allowing the diner to try wines that would typically be only available by the bottle. Coal Fired Pizza brings a little uptown to the suburbs and is a must-try.
